Mom’s dream (Icelandic chocolate cake)

This is a pretty typical Icelandic “skúffukaka” or chocolate cake. It’s simple to make but is very soft and delicious.

150 gr  sugar
150 gr brown sugar
125 gr butter
2 eggs
260 gr flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
40 gr cocoa powder
200 ml milk

Pre-heat the oven to 180°C (355°F).
Whisk the sugar and butter well together. Add the eggs one at a time and mix everything well together.
Mix the dry ingredients and add to the rest of the mix along with the milk. Pour into two evenly sized baking pans and bake for 20-22 minutes at 180°C (355°F).

Icing:
500 gr icing sugar
60 gr cocoa powder
1 egg
80 gr butter
1 tsp vanilla extract
3-4 tbsp strong coffee

Melt the butter and whisk everything together until the icing becomes smooth. Ice the cake once it’s completely cool or otherwise the icing will melt.
