Chicken tostadas

Tostadas is one of my favorite mexican dishes and this version is simple and tasty. You can BBQ chicken breasts, bake them in the oven, use leftover chicken or simply buy a cooked chicken and cut it. This recipe serves 3-4 people.

8 tostadas
1 1/2 cup shredded cheese
1 cup mashed avacado (around 2 small ones)
2 medium limes, halved
a pinch of salt
2 cups of fresh diced tomatoes
1/2 cup finely chopped onion
4 tbsp fresh cilantro
freshly ground pepper
400 gr cooked chicken breasts, diced (around 2 breasts)
2/3 cup black beans, rinsed
2 jalapenos, finely diced (you can skip this if you don’t like it spicy)

If you don’t have cooked chicken then BBQ or bake 2 chicken breasts in the oven, 200°C/400°F for 30 minutes. Lower the heat to 175°C/350°F for the tostadas.

Mix in a bowl: avacado, juice of one lime, jalapeno and a pinch of salt.

Mix in another bowl: tomatoes, onion, cilantro, juice of 1 lime, 1/2 tsp salt and a freshly ground pepper.

Assemble the tostadas: 1/3 cup of chicken, 1 tbsp black beans and 2 1/2 tbsp shredded cheese. Bake for 3 minutes or until the cheese has melted. Top with a dollop of avacado and a spoonful of the tomato salsa before serving.
