This chicken burger is a little unusual. It has apples and fennel seeds that give a little bit of a different taste. You can’t really feel the apples though. I got 4 burgers out of this recipe.
2 tsp coconut oil
1 small onion, finely diced (around 1 cup)
1 apple, shredded (in a food processor if you have one of those to speed up the process)
450 gr ground chicken (if you can’t find it in the store you can shred 2 chicken breasts in a food processor, that’s what I did)
1/4 cup fresh cilantro, chopped
1 tsp chicken spice blend
1 tsp fennel seeds, roughly chopped
1/2 tsp smoked paprika
1/2 tsp salt
1/2 tsp pepper

Heat 1 tsp of the coconut oil in a big pan over medium heat. Add onion, a pinch of salt and fry for 2 minutes. Add the apples to the pan and continue frying for 2 more minutes or until the apples and onion start to soften.
Remove from the heat and put the onion and apples in a large glass bowl and let cool for 5 minutes.
Add the ground chicken, cilantro, chicken spices, fennel seeds, smoked paprika, salt and pepper. Mix everything well together and form 4 burgers.
Heat 1 tsp of coconut oil on the pan and fry the burgers for about 3 minutes on each side or until they are cooked through.
Serve in a hamburger bun with mayo, lettuce, tomato or whatever you come up with. I put a thin layer of mayo on a thin whole wheat hamburger bun and put a layer of aragula on top of the burger.
