Makes 4 portions
250 gr red lentils
1 onion
1 red pepper
1 tbsp oil
1/2 can coconut milk (around 200 ml)
1 tbsp orange concentrate
1/2 tbsp curry powder
1 tbsp turmeric
1 bunch fresh cilantro
1/2 l (500 ml) water

Rinse the lentils well and drain. Boil according to package instructions.
Dice the onion and pepper finely and set aside.
Soften the onion and pepper for a few minutes in a pot over medium heat. Add the coconut milk, orange concentrate, curry, turmeric, water and boiled lentils and stir well. Let it simmer for a few minutes. Add the cilantro at the end.
I made a naan bread that fit perfectly with the soup (recipe here). I started with making the naan and while it was rising I made the soup. I fried the breads while the soup was simmering.
Each portion contains 22 gr of carbohydrates.
