1 cup flour (250 ml)
2 tbsp sugar
2 tsp baking powder
1/2 tsp salt
1 cup milk (250 ml)
2 tbsp vegetable oil
1 egg

Mix the dry ingredients and then add the liquid. Mix everything so it will be well incorporated.
The key to fluffy pancakes is not to overstir but it’s ok to have a few small lumps in the dough. If you think the dough is too fin then let it stand for a few minutes until it thickens a bit.
Put around 3 tbsp of dough on the pan over medium heat. The pan needs to be coated with a tiny bit of butter. Turn the panckes when little bubbles start to form, then bake for 1-2 minutes on the other side.
Serve the freshly baked pancakes with maple syrup, fresh fruit, jams, powdered sugar, butter or bacon.
