This is a simple and good dish. Perfect for serving at a party or as a weeknight dinner.
1 bunch fresh cilantro
1 can (540 ml) black beans, rinsed and drained
zest and juice from 2 limes
1 tbsp dried oregano
1/2 tsp salt
1 tsp hot sauce
6 large whole wheat tortillas
2 cups (500 ml) shredded cheese
salsa, sour cream and/or guacamole of choice

Pre-heat the oven to 200°C (400°F) and put parchment paper on some baking sheets.
Put cilantro, beans, lime, oregano, salt and hot sauce in a food processor. Process until it becomes smooth.
Spread the filling evently on 3 tortillas. Sprinkle the cheese evenly over the 3 tortillas and then top with the other 3 tortillas so it will make 3 tortilla “sandwiches”.
Bake for 10 minutes and cut each tortilla into 6 slices. Serve with salsa, sour cream and/or guacamole of choice.
