Simple and good pasta that is perfect for making during the week.
2 tbsp olive oil
500 gr Italian sausages, skin off
2 large or 4 small zucchinis, finely diced
1 large onion, finely diced
4 garlic cloves, pressed
small can (around 400 ml) crushed tomatoes
2 cups pasta of choice
5 cups (1,25 l) vegetable broth
1 tbsp Italian seasoning
1/4 cup freshly grated parmesan
salt and pepper
1) Heat olive oil in a large pot over medium heat. Add the sausages and mash them with a wodden spoon. Fry for 3-4 minutes.
2) Add the onion and garlic and fry for 5 minutes. Add the broth, tomatoes and Italian seasoning. Bring to a boil and let simmer for about 15 minutes.
3) Add the zucchini and let simmer for 10 minutes. Add the pasta and boil according to package instructions.
4) Season with salt and pepper to your liking and top with the grated cheese at the end or serve it on the side for those who don’t like parmesan.
