1 large potato, sliced thinly
1 onion, finely diced
1 tbsp ginger, grated
2 garlic cloves
1 thai chili or dried chili flakes, quantity depending on how spicy you like it
1 tsp salt
1/2 tsp cayanne pepper
1/2 tsp turmeric
1 tbsp ground coriander
500 gr lean ground beef
1 tbsp oil for frying
2 tomatoes or crushed tomatoes from a can, around 1 cup
garnish: garam masala and fresh cilantro

Fill a large bowl of water. Slice the potato thinly and put in the bowl of water.
Fry the onion until it becomes translucent. Add the spices, ginger and garlic (and chili if you’re using that) and fry for about a minute.
Add the ground beef and 1/4 cup of water and mix everything well together.
Let simmer for a few minutes or until the water evaporates and the beef is well cooked. If you have a lid for your pan you can cover the pan with that.
Add the potatoes to the pan and let simmer for a few more minutes. Add water it needed.
Add the tomatoes and continue simmering until the potatoes are cooked.
Garnish with fresh cilantro and season with garam masala.
