Gingerbread cookies


This recipe is from my grandmother. My mom always makes them before Christmas and I’m starting to do it also.

500 gr flour
250 gr sugar
250 gr butter, room temperature
2 tbsp yeast
2 tsp baking soda
1 egg
250 ml syrup, e.g. maple or agave
1 tsp ground cloves
1 tsp cinnamon
1 tsp ground peppe
1 tsp cocoa powder
1 tsp ground allspice


Mix the dry ingredients manually with a spoon. Add the rest of the ingredients and use the knead attachment for your stand mixer or alternatively knead it by hand. Put the dough in the fridge overnight.

Form little balls (be careful to have enough space on the baking sheet since they will flatten in the oven. Bake for 10 minutes at 180°C (355°F).
