Quick and easy cookies that are so healthy you can even have them for breakfast. The only sweetness comes from the bananas and dates.
1 cup old-fashioned rolled oats that we’ll turn into oat flour (see later)
2 very ripe bananas (brown spots on the outside are a good sign)
2 Medjool dates
2 tbsp coconut oil
1 egg
1 cup old-fashioned rolled oats (important to use old-fashioned to get the right texture)
1/4 cup unsweetened shredded coconut
1/2 cup dark chocolate chips
Pre-heat the oven to 350°F (175°C).
Put 1 cup of oats in a food processor and pulse until you get coarse oat flour.
Add the bananas, dates (make sure the stone is removed), coconut oil and eggs to the food processor and process until everything is well mixed. Put into a large bowl.
To the large bowl add the other cup of rolled oats, shredded coconut and chocolate chips to the bowl and and mix with a spatula.
Use a 1/4 measuring cup to make 10 uniform sized cookies and place them on a parchment-lined baking sheet. Flatten them with your fingers until about 1/2″ thick.
Bake for 18-22 minutes or until golden. Then let them cool down completely. Store in the fridge or freezer.
