Sugar-free coconut treats

This is perfect to have on hand when you’re craving something sweet but you want to keep your blood sugar steady. You can also make the deluxe version by coating the treats with dark chocolate, sugar free or not.

3 tbsp coconut oil
3 tbsp erythritol
3 tbsp non-sweetened coconut milk
5-6 drops coconut or vanilla stevia
around 12 tbsp unsweetened grated coconut

Melt the coconut oil, erythritol, almond milk and stevia in the microwave. Add the grated coconut and combine. Put some parchment paper in a small plastic container, I used a 13x13cm tupperware container. Press the mixture well into the box. Place in the freezer for 45 minues to harden and then cut up into small pieces. Coat with melted chocolate for the deluxe version 🙂 Store in the fridge or freezer.
