Baked oatmeal with maple syrup and berries

Convenient to make in the weekend and have for breakfast throughout the week or as an afternoon snack. Can be stored for 5 days in the fridge or 3 months in the freezer.

It’s important to use old-fashioned rolled oats for this recipe, otherwise you won’t get the right texture.

2 large eggs
1 cup unsweetened almond milk or other plant-based milk
1/3 cup maple syrup
1/4 cup unsweetened apple sauce
1 tbsp coconut oil
1/2 tsp vanilla extract
3 cups old-fashioned rolled oats
3/4 cup fresh or frozen berries (I used a frozen berry blend)
1 tbsp chia seeds
1 tsp baking powder
1/2 tsp salt


Pre-heat the oven to 180°C (350°F) and line a square baking dish (around 8×8 inches or 20×20 cm) with parchment paper.

In a big bowl mix eggs, almond milk, maple syrup, apple sauce, oil and vanilla extract until well combined.

Add the oats, berries, chia seeds, baking powder and salt and mix everything well together.

Pour the batter into the baking dish, even it out and bake for about 40 minutes or until the middle is barely stiff. Let cool well before slicing into 9 even pieces.
